Deliciously moist homemade fruit cake - an age-old family recipe. The fruit is soaked in brandy overnight before being added to a rich buttery mixture together with nuts and Christmas spices. Slowly and carefully baked for several hours to seal in the flavours. To age our cakes - we dose them with brandy from the minute they come out of the oven and then weekly until they are ready for decorating. Delicately iced with Marzipan and Pettinice (the white icing), decorated with festive edible Christmas shapes and finally finished off with ribbon detail. Presented on a cake board and wrapped in cellophane - a wonderful Christmas Gift or for you to nibble on over the merry holiday season.
